- Terroir : "Bourgogne Chardonnay is a regional AOC created in 1937, covering the départements of Yonne, Côte-d'Or and Saône-et-Loire. The grapes for our Bourgogne Chardonnay come from the area of Buxy and Montagny in the Côte Chalonnaise."
- Vinification & Elevage : "These grapes are harvested by hand and placed in small crates to prevent the bunches being compacted. For our white wines, the grapes arrive whole at our pneumatic wine press. Slow gentle pressing allows the juices to be extracted in the best possible conditions. These juices are then placed in a settling vat and cooled to 8° for 24 hours to clarify them. Lastly, they are placed directly in oak barrels (10% of which are new) for alcoholic fermentation where they will develop silky aromas."
- Commentaries by our oenologist : This wine is an elegant, balanced introduction to Burgundy wines. Our vinification in oak barrels gives it complexity and richness. It is a perfect introduction to Burgundy's most prestigious appellations.
- Food pairing : Very versatile, this wine is perfect for moments of sharing and conviviality gathered round a seafood platter, cheese platter, or a hot Mont d'Or cheese.
