Description
The Rully vineyard is located in the Côte Chalonnaise, more precisely between the Bouzeron and Mercurey appellations. La vigne est ici plantée sur des coteaux faiblement pentus aux alentours des 300 mètres d’altitude. The climate at Les Champs Cloux is ideal for growing Pinot Noir grapes. Its exposure allows the grapes to ripen optimally, producing dense, high-quality wines.
Vinification :The grapes are sorted by hand on a vibrating table, then destemmed and transported to the vat on a conveyor belt, always with the aim of keeping the grapes whole and uncrushed. We carry out cold pre-fermentation maceration at 10°C for 4 to 5 days. During this phase, the aromas of the grapes and components such as anthocyanins are released. Next comes fermentation, during which we carry out daily punching down to extract the substance, the tannins. Fermentation lasts between 18 and 20 days.
